- 2 cups all-purpose flour
- 1 cup walnuts, chopped
- 1 cup fresh or dried cranberries
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup orange juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, beat eggs, then add sugar, oil, vanilla, and orange juice.
- Combine wet and dry ingredients until just mixed.
- Fold in walnuts and cranberries.
- Pour batter into a greased loaf pan.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store in an airtight container.
- This bread can be made with dried cranberries as well.
- Try adding a pinch of cinnamon for extra flavor.
