- 1 pound fresh spinach
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1/2 cup heavy cream
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- Wash and trim the spinach.
- In a large pot, melt the butter over medium heat.
- Add the flour and whisk for 1-2 minutes.
- Gradually pour in the milk while whisking continuously.
- Add the heavy cream and continue to cook until thickened.
- Stir in the nutmeg, salt, and pepper.
- Add the spinach and cook until wilted.
- Remove from heat and mix in the Parmesan cheese.
