Ingredients

- 8 oz pasta
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup heavy cream
- 1 cup vegetable broth
- 2 tbsp Cajun seasoning
- 1 cup cherry tomatoes, halved
- Salt to taste
- Pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add onion and garlic. Sauté until softened.
- Add bell pepper and cook for 3 minutes.
- Pour in heavy cream and vegetable broth. Stir well.
- Add Cajun seasoning, cherry tomatoes, salt, and pepper. Mix well.
- Simmer for 5-7 minutes until slightly thickened.
- Add cooked pasta to the skillet. Toss to coat.
- Serve hot.
Notes
- This dish can be made vegan by using plant-based cream.
- Adjust the Cajun seasoning to your spice preference.
- Top with fresh parsley for added flavor.
