  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 2 tbsp Cajun seasoning
  • 1 cup cherry tomatoes, halved
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onion and garlic. Sauté until softened.
  4. Add bell pepper and cook for 3 minutes.
  5. Pour in heavy cream and vegetable broth. Stir well.
  6. Add Cajun seasoning, cherry tomatoes, salt, and pepper. Mix well.
  7. Simmer for 5-7 minutes until slightly thickened.
  8. Add cooked pasta to the skillet. Toss to coat.
  9. Serve hot.
