Description
A creamy and flavorful white chicken chili made in a crockpot.
Ingredients

- 2 pounds boneless skinless chicken breasts
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup corn, frozen or canned
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crockpot.
- Add onion, garlic, beans, green chilies, corn, and broth.
- Season with cumin, chili powder, salt, and pepper.
- Cook on low for 6-8 hours or high for 4 hours.
- Remove chicken and shred it using two forks.
- Return shredded chicken to the crockpot.
- Stir in heavy cream and mix well.
- Cook for an additional 30 minutes on low.
Notes
- Serve with tortilla chips or bread.
- Top with cheese or avocado if desired.
- Store leftovers in an airtight container in the fridge.
