Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 cup corn, frozen or canned
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add onion, garlic, beans, green chilies, corn, and broth.
  3. Season with cumin, chili powder, salt, and pepper.
  4. Cook on low for 6-8 hours or high for 4 hours.
  5. Remove chicken and shred it using two forks.
  6. Return shredded chicken to the crockpot.
  7. Stir in heavy cream and mix well.
  8. Cook for an additional 30 minutes on low.

  • Serve with tortilla chips or bread.
  • Top with cheese or avocado if desired.
