Description

A warm and hearty creamy Italian sausage gnocchi soup that combines rich flavors and comforting textures, perfect for chilly weather.

Ingredients

Scale
  • 1 pound Italian sausage: Choose between mild or spicy, depending on your preference.
  • 1 package (16 oz) gnocchi: You can use fresh or frozen gnocchi for this recipe.
  • 4 cups chicken broth: Homemade broth adds a richer flavor, but store-bought works well too.
  • 1 cup heavy cream: This ingredient gives the soup its creamy texture. You can substitute with half-and-half for a lighter option.
  • 2 cups fresh spinach: Wash and roughly chop the spinach to add a nutritious touch.
  • 4 cloves garlic: Minced garlic enhances the flavor profile of the soup.
  • 1 medium onion: Diced onion adds sweetness and depth to the dish.
  • 2 medium carrots: Diced carrots provide a slight sweetness and vibrant color.
  • 2 celery stalks: Diced celery adds crunch and flavor.
  • 1 tablespoon Italian seasoning: This blend of herbs brings an authentic Italian taste.
  • Salt and pepper: Use these to season the soup to your liking.
  • Olive oil: About 2 tablespoons for cooking the sausage and vegetables.
  • Fresh parsley or basil: Optional garnish for added flavor and presentation.

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook for about 5-7 minutes until browned. Remove and set aside.
  2. In the same pot, add diced onion, carrots, and celery. Sauté for about 5 minutes, then add minced garlic and cook for an additional 1-2 minutes. Sprinkle in Italian seasoning.
  3. Pour in 4 cups of chicken broth and bring to a gentle simmer. Add the gnocchi and cook until they float to the top (2-3 minutes for fresh, 5-7 minutes for frozen).
  4. Reduce heat to low, stir in 1 cup of heavy cream, and add the cooked sausage back into the pot. Heat through for another 2-3 minutes, then stir in chopped spinach until wilted. Season with salt and pepper to taste.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stove over low heat, adding broth or water if the soup thickens.
