Ingredients
- Penne Pasta: 300 grams (10.5 oz)
- Italian Sausage: 300 grams (10.5 oz)
- Heavy Cream: 240 ml (1 cup)
- Garlic: 3 cloves, minced
- Onion: 1 medium, diced
- Fresh Spinach: 150 grams (5 oz)
- Parmesan Cheese: 50 grams (1/2 cup), grated
- Olive Oil: 2 tablespoons
- Crushed Red Pepper Flakes: 1/2 teaspoon
- Salt and Pepper: to taste
Instructions
- Cook the penne pasta in a large pot of salted boiling water until al dente, about 10-12 minutes. Drain and reserve 1/2 cup of pasta water.
- In a large skillet, heat olive oil over medium heat and sauté the Italian sausage until browned, about 5-7 minutes. Remove and set aside, keeping the drippings in the pan.

- Add the cooked sausage and fresh spinach to the skillet, stirring until the spinach wilts. If the sauce is too thick, add reserved pasta water to reach desired consistency.
- Toss in the drained penne pasta and grated Parmesan cheese, mixing well. Season with salt and pepper to taste.
- Serve warm, garnished with extra Parmesan cheese and crushed red pepper flakes if desired.
