Ingredients

  • Penne Pasta: 300 grams (10.5 oz)
  • Italian Sausage: 300 grams (10.5 oz)
  • Heavy Cream: 240 ml (1 cup)
  • Garlic: 3 cloves, minced
  • Onion: 1 medium, diced
  • Fresh Spinach: 150 grams (5 oz)
  • Parmesan Cheese: 50 grams (1/2 cup), grated
  • Olive Oil: 2 tablespoons
  • Crushed Red Pepper Flakes: 1/2 teaspoon
  • Salt and Pepper: to taste

Instructions

  1. Cook the penne pasta in a large pot of salted boiling water until al dente, about 10-12 minutes. Drain and reserve 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat and sauté the Italian sausage until browned, about 5-7 minutes. Remove and set aside, keeping the drippings in the pan.
  3. Add diced onion to the skillet and sauté until translucent, about 3-4 minutes. Add minced garlic and crushed red pepper flakes, cooking for another 1-2 minutes.
  4. Pour in heavy cream, stirring to combine, and let it simmer for 2-3 minutes until slightly thickened.
  5. Add the cooked sausage and fresh spinach to the skillet, stirring until the spinach wilts. If the sauce is too thick, add reserved pasta water to reach desired consistency.
  6. Toss in the drained penne pasta and grated Parmesan cheese, mixing well. Season with salt and pepper to taste.
  7. Serve warm, garnished with extra Parmesan cheese and crushed red pepper flakes if desired.
