Description
A rich and creamy lobster bisque made with fresh lobster and aromatic vegetables.
Ingredients

- 2 lobsters, cooked and meat removed
- 4 cups lobster stock
- 1 cup heavy cream
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1/4 cup brandy
- 2 tablespoons tomato paste
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Stir in brandy and cook until reduced by half.
- Add tomato paste and lobster stock, then bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Blend the mixture until smooth.
- Return to heat and stir in heavy cream.
- Add lobster meat and heat through.
- Season with salt and pepper.
- Serve hot.

- Use fresh lobster for best flavor.
- Adjust cream for desired richness.
- Garnish with chives if desired.
