Ingredients

Instructions

  1. In a large pot, sauté onion, carrots, and celery until soft.
  2. Add garlic and cook for 1 minute.
  3. Stir in brandy and cook until reduced by half.
  4. Add tomato paste and lobster stock, then bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Blend the mixture until smooth.
  7. Return to heat and stir in heavy cream.
  8. Add lobster meat and heat through.
  9. Season with salt and pepper.
  10. Serve hot.
