- 2 boneless, skinless chicken breasts (about 1 pound or 450 grams)
- 8 ounces (225 grams) penne pasta
- 1 cup (240 ml) heavy cream
- 1 cup (100 grams) grated Parmesan cheese
- 3 cloves garlic, minced
- 2 cups (60 grams) fresh spinach
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
- Cook the penne pasta in salted boiling water until al dente, about 10-12 minutes. Reserve 1/2 cup of pasta cooking water, then drain.
- Season the chicken breasts with salt and black pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat and sear the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and slice the chicken.
- In the same skillet, sauté minced garlic for 1 minute, then add heavy cream and bring to a simmer. Stir in grated Parmesan cheese until melted and smooth.
- Add fresh spinach to the sauce and cook until wilted. Then, add the cooked penne and sliced chicken, tossing to coat. Adjust seasoning if needed.
- Serve warm, garnished with extra Parmesan cheese if desired.
