Ingredients

  • 1 cup red lentils
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 1 can coconut milk (400ml)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Sauté until soft.
  3. Add cumin and stir for 1 minute.
  4. Add red lentils and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes until lentils are tender.
  6. Stir in coconut milk and blend until smooth.
  7. Season with salt and pepper.
  8. Serve hot.
