Description
A rich and creamy red lentil soup that is hearty and satisfying.
Ingredients

			- 1 cup red lentils
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups vegetable broth
- 1 can coconut milk (400ml)
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrot, and celery. Sauté until soft.
- Add cumin and stir for 1 minute.
- Add red lentils and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes until lentils are tender.
- Stir in coconut milk and blend until smooth.
- Season with salt and pepper.
- Serve hot.
Notes
- Store leftovers in an airtight container in the fridge.
- Reheat on the stove or microwave.
