Ingredients

  • 1 head of garlic, roasted
  • 1 onion, diced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the tomatoes and garlic on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast in the oven for 25 minutes.
  4. In a pot, sauté the onion until translucent.
  5. Add the roasted tomatoes and garlic to the pot.
  6. Pour in the vegetable broth and bring to a boil.
  7. Reduce heat and simmer for 10 minutes.
  8. Puree the soup until smooth and stir in the heavy cream.
  9. Serve hot, garnished with fresh basil.
