- 2 cups ripe tomatoes, chopped
- 1 head of garlic, roasted
- 1 onion, diced
- 2 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place the tomatoes and garlic on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast in the oven for 25 minutes.
- In a pot, sauté the onion until translucent.
- Add the roasted tomatoes and garlic to the pot.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Puree the soup until smooth and stir in the heavy cream.
- Serve hot, garnished with fresh basil.
