A delicious creamy spinach mushroom lasagna layered with rich flavors.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups spinach, chopped
  • 2 cups mushrooms, sliced
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. In a skillet, heat olive oil and sauté garlic until fragrant.
  4. Add mushrooms and cook until soft. Stir in spinach and cook until wilted.
  5. In a bowl, mix ricotta cheese, salt, pepper, and nutmeg.
  6. Spread a layer of marinara sauce in the bottom of a baking dish.
  7. Layer 4 lasagna noodles, half of the ricotta mixture, half of the spinach and mushroom mixture, and a layer of mozzarella.
  8. Repeat the layers, finishing with noodles, marinara sauce, and remaining mozzarella and parmesan cheese on top.
  9. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden.
  10. Let it cool for 10 minutes before serving.

Notes

  • Use fresh spinach for best flavor.
  • Feel free to add other vegetables.
  • Can be made ahead and frozen.
