A delicious creamy spinach mushroom lasagna layered with rich flavors.
Ingredients

- 12 lasagna noodles
- 2 cups ricotta cheese
- 2 cups spinach, chopped
- 2 cups mushrooms, sliced
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon nutmeg
- 2 cups marinara sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- In a skillet, heat olive oil and sauté garlic until fragrant.
- Add mushrooms and cook until soft. Stir in spinach and cook until wilted.
- In a bowl, mix ricotta cheese, salt, pepper, and nutmeg.
- Spread a layer of marinara sauce in the bottom of a baking dish.
- Layer 4 lasagna noodles, half of the ricotta mixture, half of the spinach and mushroom mixture, and a layer of mozzarella.
- Repeat the layers, finishing with noodles, marinara sauce, and remaining mozzarella and parmesan cheese on top.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden.
- Let it cool for 10 minutes before serving.
Notes
- Use fresh spinach for best flavor.
- Feel free to add other vegetables.
- Can be made ahead and frozen.
