Ingredients

- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 package (9 oz) cheese tortellini
- 1 cup heavy cream
- 1 cup spinach, chopped
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and garlic, sauté until translucent.
- Pour in vegetable broth and diced tomatoes, bring to a boil.
- Add tortellini, reduce heat, and simmer for 5-7 minutes.
- Stir in heavy cream and spinach, cook until spinach wilts.
- Season with salt and pepper.
- Serve with grated Parmesan cheese on top.
Notes
- Use fresh or frozen tortellini.
- Add other vegetables like carrots or bell peppers if desired.
- This soup can be made ahead and reheated.
