Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and garlic, sauté until translucent.
  3. Pour in vegetable broth and diced tomatoes, bring to a boil.
  4. Add tortellini, reduce heat, and simmer for 5-7 minutes.
  5. Stir in heavy cream and spinach, cook until spinach wilts.
