Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season salmon fillets with salt and pepper, then add to the skillet.
  3. Cook salmon for 4-5 minutes on each side until cooked through. Remove and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute.
  5. Add heavy cream, spinach, sun-dried tomatoes, and Parmesan cheese. Stir well.
  6. Let the sauce simmer for 3-4 minutes until thickened.
  7. Return the salmon to the skillet and coat with the sauce.
  8. Serve hot.
