Ingredients

- 4 salmon fillets
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Season salmon fillets with salt and pepper, then add to the skillet.
- Cook salmon for 4-5 minutes on each side until cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Add heavy cream, spinach, sun-dried tomatoes, and Parmesan cheese. Stir well.
- Let the sauce simmer for 3-4 minutes until thickened.
- Return the salmon to the skillet and coat with the sauce.
- Serve hot.

- Serve with pasta or rice for a complete meal.
- Adjust the amount of garlic to your preference.
