Crispy golden Italian limoncello ricotta fritters with a hint of fresh mint.

- 1 cup ricotta cheese
- 1/4 cup limoncello liqueur
- 1/4 cup sugar
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon baking powder
- 1/4 cup fresh mint, chopped
- Vegetable oil, for frying
Instructions
- In a bowl, mix ricotta cheese, limoncello, and sugar until smooth.
- Add flour, eggs, baking powder, and mint. Stir until combined.
- Heat oil in a pan over medium heat.
- Spoon batter into hot oil, frying until golden brown on each side.
- Remove fritters and drain on paper towels.
Notes
- Serve warm with powdered sugar on top.
- Store leftovers in an airtight container in the fridge.
- Adjust mint quantity to taste.
