Ingredients

  • 2 cups beef broth
  • 4 carrots, chopped
  • 3 potatoes, diced

  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 tablespoon olive oil

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Sear the roast on all sides until browned.
  4. Place the roast in the crockpot.
  5. Add carrots, potatoes, onion, and garlic on top of the roast.
  6. Pour in beef broth and Worcestershire sauce.
  7. Sprinkle thyme over the ingredients.
  8. Cover and cook on low for 8 hours or high for 4 hours.
  9. Check for tenderness and serve warm.
