Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach, chopped
  • 1 cup pasta, uncooked

Instructions

  1. Add chicken, broth, onion, garlic, Italian seasoning, salt, and pepper to the crockpot.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Remove chicken and shred it, then return it to the pot.
  4. Add heavy cream, parmesan cheese, spinach, and pasta.
  5. Cook on high for an additional 30 minutes until pasta is tender.

Notes

  • This soup can be stored in the refrigerator for up to 3 days.
  • Adjust the thickness by adding more or less cream.
  • Top with additional parmesan before serving if desired.
