Ingredients

- 2 pounds chicken breast
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup chicken broth
- 8 tortillas
- Optional toppings: salsa, sour cream, cheese
Instructions
- Place chicken in the crockpot.
- Add sliced bell pepper and onion on top.
- Sprinkle chili powder, cumin, garlic powder, salt, black pepper, and cayenne pepper over the chicken and vegetables.
- Pour chicken broth into the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken with two forks and mix with the vegetables.
- Serve in tortillas with optional toppings.
Notes
- Adjust spices to your taste.
- Use beef or shrimp instead of chicken if preferred.
- Can be served with rice or beans.
