- 2 pounds boneless chicken breasts
- 1 can (10 oz) green chile enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crockpot.
- Pour green chile enchilada sauce over chicken.
- Add black beans and corn to the pot.
- Sprinkle cumin, garlic powder, onion powder, salt, and pepper on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred chicken before serving.
- Serve with tortillas or over rice.
