A delicious and easy-to-make veggie pizza casserole using a crockpot.
Ingredients

- 2 cups of pasta
- 1 jar (24 oz) pizza sauce
- 1 cup bell peppers, chopped
- 1 cup mushrooms, sliced
- 1 cup zucchini, diced
- 1 cup mozzarella cheese, shredded
- 1/2 cup olives, sliced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions.
- In a large bowl, combine cooked pasta, pizza sauce, bell peppers, mushrooms, zucchini, olives, Italian seasoning, salt, and pepper.
- Transfer mixture to the crockpot.
- Top with mozzarella cheese.
- Cook on low for 4-6 hours or until vegetables are tender.
Notes
- Feel free to add any other favorite vegetables.
- Can be stored in the refrigerator for up to 3 days.
- Reheat in the microwave or on the stovetop.
