A refreshing cucumber shrimp salad perfect for summer.
Ingredients

- 1 pound shrimp, peeled and deveined
- 2 cups cucumber, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the shrimp in boiling water until pink, about 2-3 minutes.
- Drain and let cool.
- In a large bowl, combine cucumber, red onion, and cilantro.
- Add cooled shrimp to the bowl.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Chill in the refrigerator for 30 minutes before serving.

- Adjust lime juice to taste.
