- 1 head cauliflower, cut into florets
- 1 cup cooked rice
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup peas
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a pan, heat olive oil over medium heat. Sauté onion and garlic until translucent.
- Add cauliflower florets, curry powder, salt, and pepper. Stir well for 5 minutes.
- Mix in the cooked rice and peas.
- Pour in the coconut milk and combine everything.
- Transfer the mixture to a baking dish.
- Bake for 30 minutes until golden brown.
Notes
- Adjust curry powder to taste.
- Add other vegetables if desired.
- Can be served with naan or rice.
