  • 200 grams (1 1/2 cups) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for about 10-15 minutes to soften the dates.
  3. In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, cinnamon, cloves, nutmeg, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Start and end with the dry ingredients, mixing until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
