Ingredients

- 1 cup dark dates, pitted and chopped
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- Zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, combine the chopped dates and buttermilk. Let it soak for 15 minutes.
- In another bowl, cream the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla and lemon zest.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture, alternating with the date mixture.
- Mix until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
- Store leftovers in an airtight container.
- Great served with tea or coffee.
- Can be topped with a lemon glaze for extra flavor.
