Ingredients

  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, combine the chopped dates and buttermilk. Let it soak for 15 minutes.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla and lemon zest.
  6. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  7. Add the dry ingredients to the wet mixture, alternating with the date mixture.
  8. Mix until just combined.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for 50-60 minutes or until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a wire rack.
