This Dark Date & Nutmeg Cake with Glaze is rich and moist, featuring the sweet flavor of dates and a hint of nutmeg.

- 200 grams (about 7 oz) pitted dates, chopped
- 250 ml (1 cup) boiling water
- 1 teaspoon baking soda
- 125 grams (1/2 cup) unsalted butter, softened
- 150 grams (3/4 cup) brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 200 grams (1 1/2 cups) all-purpose flour
- 1 teaspoon ground nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- For the Glaze:
- 100 grams (1/2 cup) powdered sugar
- 2 tablespoons milk or cream
- 1 teaspoon vanilla extract
Instructions
- In a bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for about 10-15 minutes.
- Preheat your oven to 175°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a mixing bowl, beat the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- In another bowl, whisk together the flour, ground nutmeg, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Start and end with the flour mixture.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick comes out clean.
- Once baked, let the cake cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar, milk (or cream), and vanilla extract until smooth.
- Once the cake is completely cool, drizzle the glaze over the top.
- Slice the cake and serve it on a simple white plate.
Notes
- For added texture, fold in chopped nuts, like walnuts or pecans, into the batter.
- This cake can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
- Serve with whipped cream or vanilla ice cream for an extra treat!
