Description

A moist and flavorful cake made with dark honey and sweet dates, enhanced with orange zest.

Ingredients

Scale
  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 1 cup dark brown sugar
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Zest of 1 orange
  • 1/2 cup walnuts or pecans, chopped (optional)
  • For the glaze:
  • 1/2 cup powdered sugar
  • 2 tablespoons orange juice
  • Zest of 1 orange (for garnish)

Instructions

  1. In a bowl, combine the chopped dates with boiling water. Let them soak for about 10-15 minutes until softened. Drain and set aside.
  2. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  3. In a large mixing bowl, cream together the softened butter, dark brown sugar, and honey until light and fluffy. This should take about 3-5 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla extract. Mix until well combined.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the soaked dates, orange zest, and chopped nuts (if using) into the batter until evenly distributed.
  7. Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the glaze by whisking together the powdered sugar and orange juice until smooth. Adjust the consistency as needed by adding more juice or sugar.
  9. Once the cake is done, remove it from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Once cooled, drizzle the orange glaze over the top and sprinkle with additional orange zest for garnish.
  10. Slice the cake and serve it on a white plate. Enjoy the rich flavors of dark honey and sweet dates, complemented by the bright notes of orange zest.

  • For an extra touch, consider adding a pinch of cinnamon or nutmeg to the batter for warmth.
