Description
A moist and flavorful cake made with dark honey and sweet dates, enhanced with orange zest.
Ingredients
Scale
- 1 cup pitted dates, chopped
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 1 cup dark brown sugar
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Zest of 1 orange
- 1/2 cup walnuts or pecans, chopped (optional)
- For the glaze:
- 1/2 cup powdered sugar
- 2 tablespoons orange juice
- Zest of 1 orange (for garnish)
Instructions
- In a bowl, combine the chopped dates with boiling water. Let them soak for about 10-15 minutes until softened. Drain and set aside.
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a large mixing bowl, cream together the softened butter, dark brown sugar, and honey until light and fluffy. This should take about 3-5 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the soaked dates, orange zest, and chopped nuts (if using) into the batter until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the glaze by whisking together the powdered sugar and orange juice until smooth. Adjust the consistency as needed by adding more juice or sugar.
- Once the cake is done, remove it from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Once cooled, drizzle the orange glaze over the top and sprinkle with additional orange zest for garnish.
- Slice the cake and serve it on a white plate. Enjoy the rich flavors of dark honey and sweet dates, complemented by the bright notes of orange zest.
Notes
- For an extra touch, consider adding a pinch of cinnamon or nutmeg to the batter for warmth.
- This cake pairs wonderfully with a cup of tea or coffee.
- Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
