- 240 ml (1 cup) boiling water
- 120 ml (1/2 cup) honey

- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt

- 60 ml (1/4 cup) water (for syrup)

Instructions
- Preheat your oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.
- In a bowl, combine the chopped dates with boiling water. Let them soak for about 10 minutes until softened. Mash the dates slightly with a fork and set aside.
- In a large mixing bowl, whisk together the honey, vegetable oil, eggs, and vanilla extract until well combined. Stir in the mashed dates along with any remaining soaking water.
- In another bowl, sift together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. A few lumps are okay.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- While the cake is cooling, combine the honey, water, cinnamon, ginger, nutmeg, and a pinch of salt in a small saucepan. Bring to a simmer over medium heat, stirring until the honey is dissolved. Let it simmer for about 5 minutes until slightly thickened. Remove from heat and let it cool.
- Once the cake has cooled, place it on a serving plate. Drizzle the spiced syrup generously over the top and allow it to soak in for a few minutes.
- Cut the cake into slices and serve warm or at room temperature, with extra syrup on the side if desired.
Notes
- For added texture, fold in some chopped nuts, such as walnuts or pecans, into the batter before baking.
