Description

A moist and flavorful cake made with dates, allspice, and orange zest.

Ingredients

Scale
  • 1 cup (240 ml) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground allspice
  • 1 cup (150 g) pitted dates, chopped
  • Zest of 1 orange
  • 1/2 cup (120 ml) fresh orange juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan or line it with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground allspice.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the fresh orange juice. Start and end with the flour mixture, mixing until just combined.
  6. Gently fold in the chopped dates and orange zest until evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  10. Slice the cake and serve it on a simple white plate.

Notes

  • For added flavor, consider soaking the chopped dates in warm water or orange juice for about 15 minutes before adding them to the batter.
  • This cake can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
  • To enhance the presentation, you can dust the cooled cake with powdered sugar before serving.
