Description

Ingredients

  • 200 g (7 oz) pitted dates, chopped
  • 250 ml (1 cup) boiling water
  • 1 teaspoon baking soda
  • 100 g (1/2 cup) unsalted butter, softened
  • 150 g (3/4 cup) golden syrup
  • 100 g (1/2 cup) brown sugar
  • 2 large eggs
  • 200 g (1 1/2 cups) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, combine the chopped dates with the boiling water and baking soda. Let it sit for about 15-20 minutes until the dates soften and the mixture cools slightly.
  2. Preheat your oven to 160°C (320°F). Grease and line a loaf pan (approximately 9×5 inches) with parchment paper.
  3. In a large mixing bowl, beat the softened butter, golden syrup, and brown sugar together until the mixture is light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  5. In a separate bowl, sift together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Begin and end with the flour mixture, stirring gently until just combined. Be careful not to overmix.
  7. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for about 50-60 minutes, or until a skewer inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  10. Slice the cake and serve it warm or at room temperature. It pairs wonderfully with a cup of tea or coffee.

Notes

  • For an extra touch, drizzle some additional golden syrup over the top of the cake before serving.
  • Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
