Packed with nutritious ingredients, it’s a healthier dessert option, providing fiber from the dates and heart-healthy omega-3 fatty acids from the walnuts. Perfect for both novice and seasoned bakers, this loaf requires only a handful of pantry staples, and it’s sure to become a favorite in your baking repertoire!

Ingredients

Scale
  • 1 ½ cups (180g) pitted dates, chopped
  • 1 cup (240ml) water
  • 1 tsp baking soda
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups (180g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup (100g) walnuts, chopped

Instructions

  • Prepare the Dates: In a saucepan, combine chopped dates and water. Bring to a boil, then reduce to a simmer for 5 minutes, stirring occasionally. Remove from heat and stir in baking soda. Allow to cool.
  • Cream the Butter and Sugar: In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  • Combine the Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the cooled date mixture. Stir until everything is just combined.
  • Add the Walnuts: Gently fold in the chopped walnuts for added crunch and flavor.
  • Bake: Pour the batter into a greased 9×5-inch loaf pan. Bake at 350°F (175°C) for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

  • For a gluten-free version of this Date and Walnut Loaf, swap out the all-purpose flour with a gluten-free flour blend.
  • To make this loaf even more flavorful, consider soaking the dates in your favorite tea, such as Earl Grey, for a unique twist.
  • For a slightly more indulgent version, drizzle with a light glaze made from powdered sugar and milk for a sweet finish.
