  • 1/4 teaspoon ground nutmeg

  • 1 cup (150 g) pitted and chopped dates
  • 1/2 cup (120 ml) freshly squeezed blood orange juice
  • Zest of 1 blood orange
  • Blood orange slices for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the molasses, vegetable oil, and brown sugar. Whisk together until well blended. Add the eggs one at a time, mixing well after each addition.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the blood orange juice. Start and end with the dry ingredients. Mix until just combined, being careful not to overmix.
  5. Fold in the chopped dates and blood orange zest until evenly distributed throughout the batter.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
