Ingredients

  • 250 g (about 2 cups) all-purpose flour
  • 150 g (about 3/4 cup) granulated sugar
  • 100 g (about 1/2 cup) unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Zest of 2 clementines
  • 120 ml (about 1/2 cup) fresh clementine juice
  • 1 teaspoon vanilla extract
  • 100 g (about 1 cup) clementine slices, for decoration
  • 50 g (about 1/4 cup) apricot jam (for glaze)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a small bowl, soak the chopped dates in warm water for about 10 minutes to soften them. Drain and set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and clementine zest.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the fresh clementine juice. Begin and end with the dry ingredients, mixing until just combined. Gently fold in the soaked dates.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, heat the apricot jam in a small saucepan over low heat until it becomes liquid. Remove from heat and set aside.
  9. Once the cake is baked, allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Brush the top of the cake with the warm apricot glaze.
  10. Arrange the clementine slices on top of the glazed cake for a beautiful presentation.
