Date & Clove Tea Cake with Syrup is a moist and flavorful cake infused with the rich taste of dates and aromatic cloves.

- 200 g (1 cup) pitted dates, chopped
- 250 g (2 cups) all-purpose flour
- 150 g (3/4 cup) granulated sugar
- 100 g (1/2 cup) unsalted butter, softened
- 2 large eggs
- 240 ml (1 cup) milk
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 100 g (1/2 cup) brown sugar (for syrup)
- 60 ml (1/4 cup) water (for syrup)
- 1 teaspoon vanilla extract (for syrup)
Instructions
- Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a small bowl, combine the chopped dates with a tablespoon of flour. Set aside.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cloves, ground cinnamon, and salt. Set aside.
- Cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, mixing well after each addition. Gradually add the milk and mix until fully combined.
- Gradually add the dry ingredient mixture to the wet mixture, stirring gently until just combined. Fold in the floured dates.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick comes out clean.
- While the cake is baking, make the syrup by combining brown sugar, water, and vanilla extract in a saucepan. Simmer until slightly thickened, about 5 minutes.
- Once the cake is done, let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Drizzle the syrup over the cooled cake. Slice and serve warm or at room temperature.
