Description

Date & Clove Tea Cake with Syrup is a moist and flavorful cake infused with the rich taste of dates and aromatic cloves.

Ingredients

Scale
  • 200 g (1 cup) pitted dates, chopped
  • 250 g (2 cups) all-purpose flour
  • 150 g (3/4 cup) granulated sugar
  • 100 g (1/2 cup) unsalted butter, softened
  • 2 large eggs
  • 240 ml (1 cup) milk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 100 g (1/2 cup) brown sugar (for syrup)
  • 60 ml (1/4 cup) water (for syrup)
  • 1 teaspoon vanilla extract (for syrup)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a small bowl, combine the chopped dates with a tablespoon of flour. Set aside.
  3. In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cloves, ground cinnamon, and salt. Set aside.
  4. Cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  5. Beat in the eggs one at a time, mixing well after each addition. Gradually add the milk and mix until fully combined.
  6. Gradually add the dry ingredient mixture to the wet mixture, stirring gently until just combined. Fold in the floured dates.
  7. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick comes out clean.
  8. While the cake is baking, make the syrup by combining brown sugar, water, and vanilla extract in a saucepan. Simmer until slightly thickened, about 5 minutes.
  9. Once the cake is done, let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Drizzle the syrup over the cooled cake. Slice and serve warm or at room temperature.

Notes

  • Serve with whipped cream or vanilla ice cream for an extra touch.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
