This Date & Grapefruit Syrup Cake is a moist and flavorful dessert, combining the sweetness of dates with the tangy taste of grapefruit.

- 200 grams (about 1 cup) pitted dates, chopped
- 250 ml (1 cup) boiling water
- 1 teaspoon baking soda
- 125 grams (1/2 cup) unsalted butter, softened
- 150 grams (3/4 cup) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 200 grams (1 1/2 cups) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Zest of 1 grapefruit
- 100 ml (about 1/2 cup) freshly squeezed grapefruit juice
- For the Grapefruit Syrup:
- 150 grams (3/4 cup) granulated sugar
- 100 ml (about 1/2 cup) freshly squeezed grapefruit juice
- Zest of 1 grapefruit
Instructions
- In a bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for about 15 minutes.
- Preheat your oven to 180°C (350°F). Grease and line a 9-inch (23 cm) round cake pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Fold in the grapefruit zest and juice until just combined.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick comes out clean.
- In a small saucepan, combine the granulated sugar, grapefruit juice, and zest. Bring to a simmer over medium heat until slightly thickened.
- Allow the cake to cool in the pan for 10 minutes. Poke holes in the top and pour the grapefruit syrup over the cake.
- Let the cake cool completely before slicing.
Notes
- For added flavor, sprinkle some chopped nuts on top before baking.
- This cake pairs well with whipped cream or vanilla ice cream.
