Ingredients

- 8 oz cream cheese
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 egg
- 1/2 cup graham cracker crumbs
- 1/4 cup butter, melted
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat oven to 325°F (160°C).
- Mix cream cheese, sugar, and vanilla until smooth.
- Add egg and mix until combined.
- In a separate bowl, mix graham cracker crumbs and melted butter.
- Press crumb mixture into the bottom of mini muffin tins.
- Fill with cheesecake mixture.
- Add chocolate chips on top if desired.
- Bake for 20 minutes.
- Let cool and refrigerate for at least 2 hours before serving.
Notes
- Use room temperature cream cheese for a smoother mixture.
- Try different toppings like fruit or caramel sauce.
- Store in airtight container in the fridge.
