Ingredients

  • 200 grams (about 1 cup) pitted dates, chopped
  • 250 grams (about 2 cups) all-purpose flour
  • 150 grams (about 3/4 cup) granulated sugar
  • 100 grams (about 1/2 cup) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • Zest of 1 lemon
  • 240 ml (about 1 cup) buttermilk
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and flour a 9-inch (23 cm) round cake pan or line it with parchment paper.
  2. In a small bowl, combine the chopped dates with a tablespoon of flour. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  4. Add the eggs, one at a time, mixing well after each addition. Then, add the vanilla extract and mix until combined.
  5. In another bowl, whisk together the remaining flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture. Mix until just combined.
  6. Gently fold in the orange and lemon zest, followed by the floured dates.
  7. Pour the batter into the prepared cake pan, smoothing the top.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust the top with powdered sugar before slicing. Serve with tea or coffee.
