Ingredients

  • 1 onion, diced
  • 1 bell pepper, diced

  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • Green onions, chopped for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the onion, bell pepper, celery, and garlic. Cook until vegetables are soft.
  3. Stir in the rice and cook for a few minutes until slightly toasted.
  4. Add the beef broth and Cajun seasoning. Season with salt and pepper.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
  6. Remove from heat and let it sit covered for 5 minutes.
  7. Fluff the rice with a fork and garnish with green onions before serving.
