Ingredients

- 1 cup long-grain rice
- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Green onions, chopped for garnish
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the onion, bell pepper, celery, and garlic. Cook until vegetables are soft.
- Stir in the rice and cook for a few minutes until slightly toasted.
- Add the beef broth and Cajun seasoning. Season with salt and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and garnish with green onions before serving.

- Use leftover rice for a quicker meal.
- Adjust the spice level to your preference.
