Description
A creamy and flavorful macaroni salad inspired by Dolly Parton.
Ingredients

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup chopped celery
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1 tablespoon apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
- 2 hard-boiled eggs, chopped
Instructions
- Cook the macaroni according to package instructions.
- Drain and rinse under cold water.
- In a large bowl, mix mayonnaise, sour cream, vinegar, and sugar.
- Add celery, bell pepper, onion, and eggs to the bowl.
- Add the cooled macaroni and mix well.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving.
Notes
- For a tangier flavor, add more vinegar.
- You can substitute Greek yogurt for sour cream.
- Store leftovers in an airtight container in the refrigerator.
