  • 60 g (1/2 cup) almond flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp ground cinnamon

  • 1/4 tsp ground cloves

  • 1/4 tsp salt

  • 100 g (1/2 cup) brown sugar

  • 2 large eggs

  • 80 ml (1/3 cup) vegetable oil

  • 120 g (1/2 cup) plain yogurt or sour cream

  • 1 tsp vanilla extract

  • Zest of 1 orange (optional)

  • 2 tbsp sliced almonds (for topping, optional)


Instructions

  1. Preheat the oven to 175°C (350°F). Grease and line a 20 cm (8-inch) round cake pan or loaf tin.

  2. In a bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, speculaas spices, and salt.

  3. In another bowl, beat the brown sugar and eggs until light and fluffy. Add the vegetable oil, yogurt, vanilla extract, and orange zest (if using), and mix until smooth.

  4. Gradually fold the dry ingredients into the wet ingredients, mixing until just combined.

  5. Pour the batter into the prepared pan and sprinkle with sliced almonds if desired.

  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

  7. Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.

  8. Serve as-is or dust with powdered sugar for a simple finish.

Notes

  • If you prefer a more intense spice flavor, feel free to add extra cinnamon or ginger to the batter.

  • To make this cake gluten-free, replace the all-purpose flour with a gluten-free flour blend and ensure your baking powder is also gluten-free.
