  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pot, bring vegetable broth to a boil and add orzo. Cook for 8-10 minutes until al dente.
  3. In a large bowl, combine cooked orzo, Boursin cheese, cherry tomatoes, spinach, olive oil, salt, and pepper.
  4. Transfer mixture to a baking dish and sprinkle with parmesan cheese.
  5. Bake for 20-25 minutes until heated through and cheese is bubbly.
