- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/4 cup capers, rinsed and drained
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 1 cup chicken broth
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Prepare the chicken by pounding it to an even thickness of about 1/2 inch and seasoning with salt and pepper.
- Dredge the chicken in flour, shaking off any excess.
- Cook the chicken in a skillet with olive oil and butter until golden brown and cooked through.
- Make the piccata sauce by sautéing garlic, then adding capers, lemon juice, and chicken broth.
- Return the chicken to the skillet and let it simmer in the sauce for 2-3 minutes before serving.
Notes
- Use fresh chicken breasts for better flavor.
- Rinse capers to balance their saltiness.
- Scrape the bottom of the skillet to incorporate browned bits into the sauce.
