  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup capers, rinsed and drained
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1 cup chicken broth
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by pounding it to an even thickness of about 1/2 inch and seasoning with salt and pepper.
  2. Dredge the chicken in flour, shaking off any excess.
  3. Cook the chicken in a skillet with olive oil and butter until golden brown and cooked through.
  4. Make the piccata sauce by sautéing garlic, then adding capers, lemon juice, and chicken broth.
  5. Return the chicken to the skillet and let it simmer in the sauce for 2-3 minutes before serving.
