Ingredients

  • 3 pounds corned beef brisket
  • 1 large onion, quartered
  • 4 cloves garlic, minced
  • 4 medium carrots, sliced
  • 1 small head of cabbage, cut into wedges
  • 4 cups beef broth
  • 1 tablespoon mustard seeds
  • 1 tablespoon black peppercorns
  • 2 bay leaves

Instructions

  1. Place the corned beef in a large pot.
  2. Add onion, garlic, carrots, mustard seeds, black peppercorns, and bay leaves.
  3. Pour in beef broth to cover the meat.
  4. Bring to a boil, then reduce heat to low.
  5. Cover and simmer for 2.5 hours.
  6. Add cabbage wedges to the pot.
  7. Continue cooking for another 30 minutes until the cabbage is tender.
  8. Remove the meat and let it rest before slicing.
  9. Serve with cabbage and carrots.

  • Adjust seasoning to taste.
