Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Stir in onions and garlic, cooking until softened.
  4. Add tomato paste, beef broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Add carrots and potatoes, cooking until tender, about 30 minutes.
  7. Season with salt and pepper to taste.
  8. Remove bay leaf before serving.

  • Serve with crusty bread.
  • You can add more vegetables as desired.
