A simple and hearty beef stew made at home.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides.
- Stir in onions and garlic, cooking until softened.
- Add tomato paste, beef broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add carrots and potatoes, cooking until tender, about 30 minutes.
- Season with salt and pepper to taste.
- Remove bay leaf before serving.
Notes
- Serve with crusty bread.
- You can add more vegetables as desired.
- This stew can be made ahead and reheated.
