A simple and refreshing lemon mousse that is light and fluffy.
Ingredients

- 1 cup heavy cream
- 1/2 cup lemon juice
- 1/2 cup sugar
- 2 teaspoons lemon zest
- 1 packet gelatin
- 3 tablespoons water
- 1 teaspoon vanilla extract
Instructions
- In a small bowl, dissolve gelatin in water.
- In a mixing bowl, whip the heavy cream until soft peaks form.
- In another bowl, combine lemon juice, sugar, lemon zest, and vanilla.
- Heat the gelatin mixture until melted, then stir into the lemon mixture.
- Fold the lemon mixture into the whipped cream gently.
- Spoon into serving dishes and chill for at least 2 hours.
- Serve chilled, garnished with lemon zest if desired.
Notes
- Use fresh lemons for the best flavor.
- Can be made a day in advance.
- Adjust sugar based on your taste preference.
