Description
A simple and hearty vegan lentil stew served with creamy mashed potatoes.
Ingredients

- 1 cup lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
- 4 large potatoes, peeled and chopped
- 1/4 cup plant-based milk
- 2 tablespoons vegan butter
Instructions
- Rinse lentils under cold water.
- In a pot, sauté onion, garlic, carrots, and celery until soft.
- Add lentils, vegetable broth, thyme, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Meanwhile, boil potatoes in salted water until tender.
- Drain potatoes and mash with plant-based milk and vegan butter.
- Serve the lentil stew over mashed potatoes.
Notes
- Feel free to add other vegetables.
- Adjust spices to taste.
- Store leftovers in the fridge for up to 3 days.
