Ingredients

  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • 4 large potatoes, peeled and chopped
  • 1/4 cup plant-based milk
  • 2 tablespoons vegan butter

Instructions

  1. Rinse lentils under cold water.
  2. In a pot, sauté onion, garlic, carrots, and celery until soft.
  3. Add lentils, vegetable broth, thyme, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Meanwhile, boil potatoes in salted water until tender.
  6. Drain potatoes and mash with plant-based milk and vegan butter.
  7. Serve the lentil stew over mashed potatoes.
