Ingredients

For the Crust:

– 2 ½ cups all-purpose flour

– 1 teaspoon salt

– 1 teaspoon sugar

– 1 cup (2 sticks) unsalted butter, cold and cubed

– 6–8 tablespoons ice water

For the Filling:

– 6–7 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced

– ¾ cup granulated sugar

– ¼ cup brown sugar

– 2 tablespoons all-purpose flour

– 1 teaspoon cinnamon

– ¼ teaspoon nutmeg

– 1 tablespoon lemon juice

– 2 tablespoons unsalted butter, cubed

For the Topping:

– 1 egg, beaten

– 1 tablespoon granulated sugar


Instructions

Step 1: Make the Pie Dough

1. In a large bowl, mix the flour, salt, and sugar.

2. Add the cold, cubed butter and use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.

3. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Avoid overworking the dough.

4. Divide the dough into two disks, wrap each in plastic wrap, and chill in the refrigerator for at least 30 minutes.

Step 2: Prepare the Filling

1. In a large bowl, combine the apple slices, sugars, flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated.

Step 3: Assemble the Pie

1. Preheat your oven to 375°F (190°C).

2. Roll out one disk of dough on a lightly floured surface and fit it into a 9-inch pie pan. Trim any excess dough hanging over the edges.

3. Pour the apple filling into the crust and dot with the cubed butter.

4. Roll out the second disk of dough and place it over the filling. Trim, fold, and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.

Step 4: Bake the Pie

1. Brush the top crust with the beaten egg and sprinkle with sugar for a golden finish.

2. Place the pie on a baking sheet to catch any drips and bake for 50–60 minutes, or until the crust is golden brown and the filling is bubbly.

Step 5: Cool and Serve

1. Allow the pie to cool for at least 2 hours before slicing. This helps the filling set properly.
