- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted butter
- 1/4 teaspoon salt
- 1 cup cooked spinach
- 1/2 cup shredded cheese
- 1/4 cup chopped onions
Instructions
- In a bowl, mix flour and salt.
- In another bowl, whisk eggs and milk together.
- Combine wet and dry ingredients, add melted butter.
- Heat a non-stick skillet over medium heat.
- Pour a ladle of batter into the skillet, swirling to coat.
- Cook for 2 minutes until edges lift, then flip.
- Cook for another minute, then remove from skillet.
- Repeat with remaining batter.
- Fill each crepe with spinach, cheese, and onions.
- Fold and serve warm.
Notes
- Use any cheese of your choice.
- For extra flavor, add herbs to the batter.
- Serve with a side salad.
