Easy vegan taquitos filled with beans and vegetables.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup diced bell pepper
  • 1/4 cup diced onion
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon lime juice
  • 8 small corn tortillas
  • Oil for frying

Instructions

  1. In a bowl, mix beans, corn, bell pepper, onion, cumin, chili powder, and lime juice.
  2. Heat tortillas in a pan until warm.
  3. Spoon filling onto each tortilla.
  4. Tightly roll each tortilla to form a taquito.
  5. Heat oil in a pan over medium heat.
  6. Fry taquitos until golden brown on all sides.
  7. Drain on paper towels and serve hot.
