Easy vegan taquitos filled with beans and vegetables.
Ingredients

- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup diced bell pepper
- 1/4 cup diced onion
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 tablespoon lime juice
- 8 small corn tortillas
- Oil for frying
Instructions
- In a bowl, mix beans, corn, bell pepper, onion, cumin, chili powder, and lime juice.
- Heat tortillas in a pan until warm.
- Spoon filling onto each tortilla.
- Tightly roll each tortilla to form a taquito.
- Heat oil in a pan over medium heat.
- Fry taquitos until golden brown on all sides.
- Drain on paper towels and serve hot.
Notes
- Serve with salsa or guacamole.
- Store leftovers in the fridge for up to 3 days.
- Use any vegetables you prefer in the filling.
