Ingredients

- 2 cups cooked rice
- 2 eggs
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 tablespoons soy sauce
- 2 tablespoons oil
- 2 green onions, chopped
- Salt to taste
Instructions
- Heat oil in a pan over medium heat.
- Scramble the eggs and cook until set. Remove from pan.
- Add mixed vegetables to the pan and stir-fry for 2-3 minutes.
- Add cooked rice and soy sauce, and mix well.
- Add scrambled eggs and green onions, and stir to combine.
- Season with salt to taste and serve hot.
Notes
- Use leftover rice for best results.
- Adjust soy sauce according to your taste.
