Ingredients

  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup eggnog
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
  3. In another bowl, cream sugar and butter.
  4. Add egg, eggnog, and vanilla to the butter mixture. Mix well.
  5. Combine wet and dry ingredients. Stir until just combined.
  6. Pour batter into greased mini loaf pans.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let cool before removing from pans.
