Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice eggplants into 1/2 inch thick rounds.
  3. Sprinkle salt on both sides of the eggplant slices and let them sit for 20 minutes.
  4. Rinse and pat dry the eggplant slices.
  5. Place eggplant slices on a baking sheet lined with parchment paper.
  6. Spread marinara sauce on each slice.
