Ingredients

- 2 medium eggplants
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Slice eggplants into 1/2 inch thick rounds.
- Sprinkle salt on both sides of the eggplant slices and let them sit for 20 minutes.
- Rinse and pat dry the eggplant slices.
- Place eggplant slices on a baking sheet lined with parchment paper.
- Spread marinara sauce on each slice.
- Top with mozzarella and Parmesan cheese.
- Sprinkle oregano, garlic powder, salt, and pepper on top.
- Bake for 25-30 minutes, until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
